An Apple Crumble with White and Milk Chocolate and a Twist

Have you ever had an apple turnover from one of those aforementioned bad places? They are not all bad, once you recover from the liuid magma on your tongue. The other problem with them is that they are just… insipid.

Here is a dish that is a snap to make. If you know how to combine some ingredients together using a ratio, you will be able to execute this dish. Don’t let the recipe title fool you. I took the basic ratio, then added some stuff to make it more interesting. The goal here is to make people want to choose this recipe over the 99¢ gut buster.

A good apple crumble is all in the ratios. That’s right, there is not a fancy recipe that you will be needing. Here is the deal:

You need apples, spices, brown sugar, oats, a little flour, and butter. I could give you something that is super exact, but what would be the point?

I like to mix and match the apples I use for maximum flavor. The amount does not matter, it is the amount of topping you put on top that makes it the crumble. If you like a deep dish, put 12 apples. For a smaller dish, it could be anywhere from 4 to 6.

The crumble mixture is a ratio of 1:1:1:1/2 by weight. That is, brown sugar, rolled oats, melted butter and flour. You can add spices as to your liking, but the basic ratio remains the same.

Mix together and crumble on top of the apples.

That is really all there is to it. To simplify things for you all, I have included my special crumble recipe:

Eastern Spiced Apple Crumble with White and Milk Chocolate

Servings: 15

Ingredients:

  • 8 apples, peeled, cored and sliced into 8 wedges each
  • 60 grams brown sugar – (packed)
  • 1 gram nutmeg, freshly grated
  • 1 cinnamon stick, ground
  • 2 pods star anise
  • 1 pod cardamon, seeds only (husk removed)
  • 50 grams butter cut into small pieces
  • 25 grams couvature chocolate, milk
  • 25 grams couvature chocolate, white
  • 125 grams rolled oats
  • 125 grams brown sugar
  • 60 grams flour
  • 125 grams butter melted

Instructions:

1. Toss apples, brown sugar together in a medium sized bowl
2. Grind nutmeg, cinnamon stick, star anise, and cardamon seeds together in a coffee grinder.
3. Mix half of the mixture in with the apples and brown sugar; reserve the other half.
4. Grease the bottom of a 9 inch pan; spread the apples in an even layer on the bottom.
5. Break up the butter and place little dobs here and there.
6. Sprinkle each of the chocolate on top of the apples.
7. Combine reserved half of spice mixture, rolled oats, brown sugar, flour and butter together until the mixture comes together as a crumbly mix.
8. Sprinkle the mix on top of the apples and chocolate, ensuring even coverage over the apples.
9. Bake in a 200°C (400°F) oven until the crumble mix on top is golden brown, and the chocolate and apple mix is bubbling on the sides.
10. Remove from the oven, let the apple crumble rest for 15 minutes before serving.
