The three come together. What country do you think this dish represents?

How many of you love the snow drifts that pile up in front of your tempo? How many of you just love all the produce those drifts of snow produce?

Well, winter has it’s… challenges. Today is a re-working of a summer salad that got sold in FEBRUARY!

The original salad is grilled zuchini, bocconcini with oven roasted tomatoes. The zucchini and tomatoes present a seasonal problem. (I just checked my tomato vine… nope – no luck there! Even the zucchini, which grows like a weed gave a small whimper.)

Should I kill the offending sales person? No, that would be wrong. Maybe I blow off a bit of steam, but still wrong nonetheless. The answer is to switch it up a little, using items that were picked at seasonal best.

Artichokes, tossed in olive oil, salt and pepper, grilled. Oven dried plum tomatoes from the can. (Again, picked at seasonal best.) Bocconcini is good all year round.

Once all that is done, a drizzle of aged balsamic will hit it out of the park.
