Picture Of the Day: 18/365 – 18/365 – Orzo Salad with Grilled Radicchio, Preserved Lemons and Shaved Parmesan

A lovely salad to serve up in the cold Winter months.

Winter does not have to be about dreary and gloom. I saw the sun rise this morning, and after that, one can almost tolerate the bitter cold.

Enter in today’s salad. I must have been suffering from a huge brain fart, because I seriously thought that this salad was a great Winter salad. It turns out that the Radicchio is part of the chicory family, and not the cabbage family as I supposed. Another great learning day, I suppose.

Well, on then to what we did here. We made a vinaigrette with some preserved lemons and simple syrup. We then grilled the radicchio so it would mellow the flavor a bit. Add that to Orzo pasta, and into the salad with a bit of mint. Finally, we shaved some Parmesan onto it.

The whole experience with the seasonal and local bit is pretty great. Sometimes we make mistakes. Discoveries are made, and we grow from that experience.
