Simple, Fast, Easy! Delicious!

Do you have a craving for fries? Beat that craving down, pull out your knife and let’s go!

I love fries. I love the feeling of the crisp outside, the soft inside, and the taste of salt. I like my fries steaming hot; nothing is worse to me than a limp fry. (Well there are other things, but let’s just hold that thought there!)

What does that have to do with potato wedges? Everything. I like the same thing from my potato wedges. Crisp outside, soft inside. A kick of salt, and some other more “advanced” flavors.

In life, you need to change things up a little. Sure, I live in the “poutine” capital of the world, and I can get decent fries at almost any corner. Thing is, it gets boring really fast. These wedges are a snap to make. There is really no recipe. More like a set of instructions:

Potato Wedges

Per Person

Ingredients:

  • Potato, washed, cut into wedges. (8 to 10 pieces for a big potato)
  • olive oil
  • Kosher salt
  • cracked black pepper
  • chili flakes
  • garlic flakes
  • dried oregano
  • dried basil

Method:

  1. Preheat oven to 200°C (400°F)
  2. Line a baking sheet with parchment paper.
  3. Toss potatoes with oil and seasoning in a small bowl.
  4. Line the potatoes skin side down so the wedge points up. This is important.
  5. Roast the potatoes in the oven for 15 minutes, or until the top of the wedges brown slightly.
  6. Reduce heat in the oven to 175°C (350°F) and bake the wedges until they are tender. (About 30 minutes.)
  7. Serve immediately.

Not so mind shattering, that recipe there. Thing is, because it is so easy, you can change them up however you like.

What would you add to season these wedges? I can see cumin, paprika. Any others you would throw out there?

I love roasted potato wedges! Your favorite herb, rosemary, is also very good on them.
