It is a nice snack, if you can contain yourself.

Hey! Are you hungry? Got the munchies?

This recipe makes a great snack. Almonds fill you up quickly, and have vital nutrients. I remember hearing my wife’s doctor insisting that someone eat almonds every day. Let me tell you, she is a doctor you would not want to argue with. Here you are Dr. Benjamin, with a few tweaks:

BBQ Roasted Almonds

Serves 10

Ingredients:

  • 1 kg (about 2 lbs) raw almonds
  • 50 grams (1/4 cup) butter
  • 60 mL (1/4 cup) soy sauce
  • 50 grams (4 tablespoons) smoked paprika (link goes to my Amazon store)
  • 10 grams (2 teaspoons) kosher salt (to taste)

Method:

  1. Preheat oven to 150°C (300°F).
  2. Melt butter in a saucepan over medium heat. (Make sure it does not brown!)
  3. Add almonds, toss to coat evenly.
  4. Add soy sauce, paprika, and salt; toss to coat evenly.
  5. Spread out evenly on a baking sheet and roast for 20 to 30 minutes or until crunchy.
  6. Pack in an airtight container, and try and keep your hands off of them.

Oh, sure. Get me all excited until I click on the link to the smoked paprika and find out it’s listed as unavailable . . . evil!

I eat a lot of almonds and walnuts, and this will be nice for a change up once in a while. I can use regular paprika for now.

HA! contain myself. nope. i don’t buy almonds simply because of that fact. and those sweet & spicy pecans at Trader Joe’s ohhh forgetaboutit! Help me!

@Mike – Ha! Now you know the masterplan! I can’t believe that it is not available. Perhaps a call to the people at Amazon will change that!

@vanillasugar – Oh, I know the evils of sweet and spicy pecans. I know I can’t contain myself. Thing is, do I care? LOL. I am searching for a way to have my Pralines again. I am sure there is a way to do it, and hopefully one day. More important now is the blood sugar control.
On the flip side, there are so many things that I enjoy now that I would not have before. An example (in an upcoming post) is a breakfast of salmon, arugula pesto and lemon roasted asparagus. I am drooling thinking of it right now. Ta Ta for now! Hope that helped!

I love almond like this, I usually buy them but I was wonder what they put in them (chemicals??) but with your version I feel much safer. GREG
